Baked Mexican Butternut Pumpkin

Transform a whole butternut pumpkin into a stunning Mexican-inspired feast!

Baked pumpkin, blended with red onion, tomatoes, protein-packed black beans, our 'Maize'in' Mexican and Pimped Pepper seasonings, and bubbling with tasty cheese. Serve as a side dish, or as a stunning vegetarian centre piece!

1 Large butternut pumpkin
1 Tbsp Spicecraft's Pimped Pepper
1 red onion, finely diced
250 g cherry tomatoes, cut each tomato in half and half again.
420 g black beans, drained and rinsed
2 Tbsp Spicecraft's "Maize'in' Mexican Rub
2 cups grated tasty cheese
handful of coriander, finely chopped ( can use parsley if not a fan of coriander).

Instructions

Cut pumpkin in two down the length of it. Butter an ovenproof tray and put pumpkin in it, cut side down. Bake pumpkin in an oven preheated to 200 C for about 45 minutes, or until tender when pierced with a skewer. Remove from the oven and let pumpkin cool for 10 minutes.
Turn pumpkin halves over and scoop out seeds and discard them. Carefully scoop out the flesh of the pumpkin using a spoon and place flesh into a large mixing bowl, leaving a thin layer of flesh next to the skin of the pumpkin. With a potato masher, mash the pumpkin flesh a little to get rid of any large lumps. Sprinkle in some Pimped Pepper (to taste), then add the red onion, tomatoes, black beans, 1 cup of the cheese, and the 'Maize'in' Mexican Rub and mix well.
Pile mixture back into the pumpkin shells and sprinkle the remaining cheese over the top, then sprinkle of good helping of Pimped Pepper on top of the cheese.. Return pumpkin to the oven for about 15 minutes, until golden and bubbling.
Once out of the oven sprinkle with some chopping coriander, and serve with a dollop of sour cream. Enjoy!
