Slow Cooker Pulled Pork Tostadas

Pop this in the slow cooker before work and let dinner take care of itself. This Mexican-inspired dish is fuss-free, full of flavour. Think of tostadas as flat, crispy taco shells piled high with goodness - kind of like a delicious Mexican pizza! 🌮🍕

1 ½ kg Pork Shoulder
1 onion diced
2 Tbsps of bbq sauce of your choice
2 Tbsps brown sugar
1 Tbsp soy sauce
½ Spicecraft 'Maize’in' Mexican Rub
1 ½ cups beef stock
350 g Ccleslaw mix - make from shredded cabbage, carrots, celery
10 Toastads, store brought or make your own by spraying corn tortillas with cooking spray and baking or air frying 5-7 minutes
¾ cup greek yoghurt
2 ½ tsps Spicecraft 'Maize’in' Mexican Rub
Squeeze fresh lime
Spring onions, to garnish

Instructions

Drizzle a little oil over the base of the slow cooker.
Place the pork shoulder on top.
Add diced onions, brown sugar, soy sauce, and stock.
Sprinkle generously with 2 -3 Tbsps of 'Maize’in' Mexican Rub (adjust the amount to suit your spice level).
Place lid on slow cooker and cook on low 6-8 hours or high 4-5 hours.
Use two forks to shred the pork, pulling it apart into bite-sized pieces. Discard any skin and the bone( if using bone in). Stir the shredded meat back into the sauce. Cover again with the lid until ready to serve.
Mix Greek yoghurt, lime juice, and 'Maize’in' Mexican Rub to make the yoghurt sauce.
Spread a spoonful of yoghurt sauce onto each crispy tostada.Add a layer of slaw, then pile on a generous scoop of pulled pork.Top with your favourites — grated cheese, sour cream, jalapeños, guacamole, or whatever you love. Finish with sauces and a sprinkle of 'Maize’in Mexican Rub for an extra kick.
