How to make Classic Kiwi Pub Style Chicken Parma
Classic Kiwi Chicken Parma
A pub classic, this chicken parma is a super quick and easy weeknight dinner. Traditionally served with spaghetti, it’s also fantastic served in crusty bread, with a garden salad or with grilled vege. Each chicken breast makes 2-3 steaks depending on the thickness, so two large is plenty for a family of four.

Ingredients
- 2 large chicken breasts
- 2 eggs
- 2 Tbsp milk
- 1 cup breadcrumbs
- 2 Tbsp No Bagel, No Bagel Seasoning
- 2 Tbsp Crackin' Kiwi Seasoning
- Neutral oil for shallow frying
- 1 cup tomato-based pizza sauce
- 1 cup grated cheese
- Extra No Bagel, No Bagel Seasoning
To Serve
- fresh basil
- tomato spaghetti
- garden salad
Instructions
- Place a chicken breast on a chopping board then put one hand on top. Carefully slice through horizontally to make two thin steaks. If the chicken is extra thick, slice it into 3 steaks.
- In a bowl, whisk the eggs, milk, and Crackin Kiwi together. In another shallow plate, mix together the breadcrumbs and No Bagel, No Bagel with a fork.
- Take one piece of chicken breast and dredge it generously in the egg, letting the excess drip off. Place into the breadcrumbs and press down. Flip and press again to ensure it is completely covered.
- Heat a deep frying pan over a medium-high heat. Add enough oil to cover the bottom and heat until shimmering (about 30 seconds). Add one or two of the chicken steaks, ensuring the pan isn't crowded, and cook 2 minutes until golden. Flip and cook the other side for a few minutes until golden. (They’re thin so they cook quickly and with finish cooking in the oven so don't worry about checking for doneness). Repeat with remaining steak
- Preheat the grill to 250C/high. Place the fried, breaded chicken onto an oven tray. Top each with plenty of the pizza sauce, then sprinkle with grated cheese.
- Grill until the cheese has melted and is sizzling.
- Remove from oven and serve as desired.
