One Pan Quick Moroccan Beef Satay and Rice

  • 400 grams rump steak, sliced thinly
  • 1 red capsicum, diced
  • 1 yellow capsicum, diced
  • 1 onion, diced finely
  • 3 Tbsp Rockin Moroccan Seasoning
  • 2 Tbsp oil, divided
  • ⅓ cup peanut butter
  • 1 Tbsp soy sauce
  • 1 ½ cups rice
  • 2 ½ cups chicken stock (plus more if needed)
  • Spring onions
  • Greek yoghurt
  • Super Dukkah Seasoning

Instructions

  1. Heat a large frypan over a medium-high heat. Add oil and heat until sizzling. Add the beef strips and cook a few minutes each side until browned.
  1. Remove beef strips from pan, wipe clean and add another drizzle of oil. Add the onions, peppers and Rockin' Moroccan Seasoning and cook for 5 minutes until soft and beginning to brown.
  2. Stir through the rice until well coated. Add the peanut butter, chicken stock, soy sauce and stir well to combine. Bring to a simmer and place a lid on the pan and cook 10 minutes, stirring occasionally to stop rick sticking.
  3. Remove lid and add the beef pieces back then cook until the rice is plump.
  4. Serve with plenty of extra super dukkah and a dollop of greek yoghrt.
