One Pan Quick Moroccan Beef Satay and Rice
An easy one pan meal that all comes tougher into a delicious comforting meal that will feed a crowd.

Ingredients
- 400 grams rump steak, sliced thinly
- 1 red capsicum, diced
- 1 yellow capsicum, diced
- 1 onion, diced finely
- 3 Tbsp Rockin Moroccan Seasoning
- 2 Tbsp oil, divided
- ⅓ cup peanut butter
- 1 Tbsp soy sauce
- 1 ½ cups rice
- 2 ½ cups chicken stock (plus more if needed)
- Spring onions
- Greek yoghurt
- Super Dukkah Seasoning
Instructions
- Heat a large frypan over a medium-high heat. Add oil and heat until sizzling. Add the beef strips and cook a few minutes each side until browned.
- Remove beef strips from pan, wipe clean and add another drizzle of oil. Add the onions, peppers and Rockin' Moroccan Seasoning and cook for 5 minutes until soft and beginning to brown.
- Stir through the rice until well coated. Add the peanut butter, chicken stock, soy sauce and stir well to combine. Bring to a simmer and place a lid on the pan and cook 10 minutes, stirring occasionally to stop rick sticking.
- Remove lid and add the beef pieces back then cook until the rice is plump.
- Serve with plenty of extra super dukkah and a dollop of greek yoghrt.
