Maize’in' Mexican Burrito Night

Taco Tuesday, Spicecraft Style! There are a bunch of recipes here to mix and match—add your favourite vegetables or switch the sizzling beef for chicken strips. Mexican cuisine is very adaptable! This recipe will satisfy meat-eaters, vegetarians, fussy kids, and everyone in between. Set everything out family-style and let everyone assemble their own burrito. Super healthy and a great way to get more vegetables in, too!

Lime and Cilantro Rice

  • 1 cup rice, rinsed
  • 2 cup water
  • 1 teaspoon salt
  • 1 bunch cilantro, chopped
  • 1 lime, zested and juiced

Maize’in Mexican Beans

  • ½ onion, finely chopped
  • 2 teaspoon oil
  • 400 g tin of red kidney beans, drained and rinsed well
  • 250 g crushed and sieved tomatoes
  • 1 Tablespoon Maize’in Mexican Rub
  • 1 pinch salt

Sizzling Beef Strips

Mexican Vegetable Mix

  • 1 red capsicum (or any colour), sliced
  • 2 large onions, sliced
  • 2 Tablespoon Maize’in Mexican Rub, divided
  • 2 teaspoon oil

To Assemble

  • 12 tortillas
  • 4 roma tomatoes, diced
  • Extra cilantro leaves
  • 1 cucumber, diced
  • 1 Lime, juiced

Instructions

Lime and Cilantro Rice

  1. Place the rice, salt, and water into a large pot. Bring to a boil, then turn the heat down to low and cover with a lid.
  2. Cook for 12 minutes, then remove from the heat without lifting the lid. Let sit for 10 minutes, then fluff with a fork.
  3. Mix in chopped cilantro, lime zest, and the juice of half the lime.

Maize’in Mexican Beans

  1. Heat a frypan over medium-high heat, add oil, and cook the onion for 4-5 minutes, stirring until softened.
  2. Sprinkle over Maize’in Mexican Rub and mix well.
  3. Add kidney beans and tomatoes, bring to a simmer, then lower the heat and let the sauce thicken.
  4. Season with salt and more Maize’in Mexican Rub to taste.

Sizzling Beef Strips

  1. Heat oil in a large frypan over medium-high heat.
  2. Add the beef strips in batches, allowing them to brown before turning. Each side should only take about a minute. Remove from the pan and repeat with the second batch.

Mexican Vegetable Mix

  1. Heat oil in a large frypan over high heat, then add the vegetables.
  2. Sprinkle over Maize’in Mexican Rub (add more for extra spice!) and cook, stirring until they soften and begin to colour.
  3. Season with a pinch of salt.

To Assemble

  1. Warm tortillas for 30 seconds in the microwave or in a hot pan until soft.
  2. Fill each tortilla with rice, vegetables, beans or sizzling beef, tomatoes, cucumber, and a squeeze of lime. Add cheese or your favourite dressings as desired.

Notes

Pro Tip: Double the recipe and make freezer-friendly burritos. Use extra-large tortillas and fold in the fillings completely. Wrap in tin foil and freeze. When ready to eat, heat in a sandwich press.
