Asparagus & Prawn Pasta

Hello Spring, Hello Tasty!

Spring on a plate, baby. Fresh asparagus, juicy prawns, lemony zing, and our legendary Pimped Pepper turning up the flavour dial to 11.

This one’s fast, fancy-looking, and outrageously tasty — even if you make it in your trackies.

Ingredients

  • 2 Tbsp olive oil (plus a glug more for good measure)
  • 1 red onion, finely sliced
  • 2 cloves garlic, crushed
  • 300 g prawns (peeled and deveined)
  • 2 Tbsps Spicecraft Pimped Pepper
  • 1 bunch asparagus, trimmed and cut into 4cm pieces
  • 1 tomato, flesh removed and finely diced
  • Juice of 2 lemons + zest of 1
  • Cooked spaghetti (or any pasta you like), tossed with:- Olive oil- 1 Tbsp Pimped Pepper- Juice of ½ lemon
  • small basil, finely chopped

Instructions

Sizzle the good stuff

  1. Heat 2 Tbsp olive oil in a large pan over medium heat.Add the red onion and cook for 2–3 minutes until soft and fragrant.Add garlic and cook for another 30 seconds - just until it smells irresistible.

Cook the prawns

  1. Add prawns and 1 Tbsp Pimped Pepper. Cook until pink and juicy - about 2 minutes each side.Toss in the asparagus and diced tomato, stirring until the asparagus is bright green and just tender.

Make it sing

  1. Add lemon juice and zest, plus a generous glug of olive oil. Stir to make everything glossy and coated.

Add the pasta

  1. Tip in your pre-seasoned pasta (that you have already pimped with olive oil, lemon juice, and Pimped Pepper). Toss well for 1–2 minutes until everything’s mingling happily.

Serve it up

  1. Pile it high in bowls, sprinkle with chopped basil, drizzle with a touch more olive oil if you like things saucy, and sprinkle over an extra pinch of Pimped Pepper for good luck.
