Ingredients
- 750 g potatoes
- 2 Tbsp Spicecraft's Crackin' Kiwi Rub
- 3 Tbsp Mayo
- 3 Tbsp greek yoghurt
- 1 Lemon
- 1 clove garlic, minced
- 2 Tbsp pickled gherkins, diced
- 2 Tbsp cucumber, diced, same size as the gherkins
- 2 Tbsp red onion, finely diced
- 2 Tbsp fresh dill, chopped - or parsley if you don't have dill
- Spicecraft's Pimped Pepper - to taste
Instructions
- Pop the potatoes into a pot of cold, salted water. Bring to the boil, then simmer for around 25–30 minutes, until nice and tender. While they’re doing their thing, heat the oven to 200°C.
- Time for the dressing. Mix together the mayo, yoghurt, lemon juice and garlic. Finely chop the gherkins, cucumber, onion, chives and dill, then stir them through. Season with Spicecraft's Pimped Pepper to taste, give it a good mix, then pop it in the fridge until you’re ready for it.
- Once the potatoes are tender, drain them well and let them steam dry. Cut each poato into 1cm circles, spread them out on a lined baking tray. Give them a bit of breathing room - crowded potatoes don’t get properly crispy.
- Now for the good stuff. Sprinkle generously with Spicecraft Crackin’ Kiwi Rub, drizzle with a good amount olive oil, then roast for 20-25 minutes, until golden, crunchy and seriously good.
- Let the crispy potatoes cool slightly. Spoon about half the dressing into a large bowl, add the potatoes and gently toss until coated. Add more dressing as needed, then finish with a handful of fresh herbs and, if you have a good sprinkle of No Bagel, No Bagel or Super Dukkah (both are optional). Serve it alongside dinner, take it to the BBQ, or stand at the kitchen bench eating it straight from the bowl. We won’t judge.
