Bacon, Mushroom, Olives and Spinach Pasta

Ingredients:

  • 2 Tbsp olive oil
  • 1 red onion, diced
  • 2 cloves Garlic
  • 6 - 8 rashers Bacon, diced or sliced
  • 1 1/2 cups Mushrooms, thinly sliced
  • 2 Tbsp Kiwi Rub
  • 2 tsp Smokey Garlic Salt
  • 2 tins diced tomatoes
  • 1 Tbsp sugar
  • 1 Tbsp Balsamic vinegar
  • 1-2 tsp Chili flakes
  • Handful Kalamata Olives
  • 100 gm baby spinach leaves
  • 35 gm Pine nuts, toasted in a dry pan, be careful not to burn them!
  • Parmesan Cheese
  • Original Salt Rocks 
  • 500 gm Pasta - any sort, I used bow ties. Cook to manufactures instructions. 

Method:

  1. Heat oil over a medium heat, add onion and cook until soft and translucent. Add garlic, cook for 1 minute, then add the bacon. Fry until crispy. Now add the mushrooms, Kiwi Rub and Smokey Garlic Salt and cook for around 5 minutes.or until mushrooms are soft. Add both tins of tomatoes, sugar, balsamic vinegar, and chili flakes. Bring to the boil, lower the heat and let simmer for about 10 minutes, while the pasta is cooking.
  2. Remove from heat, add the olives and baby spinach leaves, stir to combine.
  3. Stir sauce through cooked pasta, serve, top each plate with some grated Parmesan and Original Salt Rocks to taste.
