Spicy Salmon Bowls with No Bagel, No Bagel and Jammin' Jerk

  • 250 g Salmon fillet
  • 1 tsp oil
  • 1 Tbsp Jammin Jerk Seasoning
  • the juice of 1 lime
  • 2 cups cooked brown rice
  • ½ Telegraph cucumber, sliced or diced
  • 1 Avocado, sliced
  • 1 Handful Lettuce, spinach or other greens
  • 1 cup Edamame soybeans
  • 1 capsicum, sliced
  • No Bagel, No Bagel Seasoning

To serve

  • Mayonnaise (kewpie if you have it)
  • Spring onions, sliced
  • Coriander, finely chopped. (optional)

Instructions

  1. Preheat oven to 200C. Place salmon on a lined baking tray. In a small bowl mix together the oil, Jammin' Jerk Rub and the lime juice. Once thoroughly mixed, drizzle all over the salmon.
  2. Cook salmon for 12-18 minutes depending on size, it should be a beautiful pink colour and flake easily with a fork.
  3. While the salmon is cooking, cook the edamame beans per the packet instructions. Drain, and Season with some Spicecraft Original Salt Rocks.
  4. Assemble bowls: Place rice, salad ingredients, edamame beans into a bowl, top with the salmon fillet, spring onions, plenty of No Bagel No Bagel seasoning, coriander, and drizzle with some mayo.
