Smokey Garlic, Potato and Bacon Chowder
Serves: 4
Time: 50 minutes
Ingredients:
- 200g bacon
- 1 small onion
- 1 teaspoon olive oil
- 1 cups chicken stock
- 1 cup cream
- 1.2 cups milk
- 2 teaspoons Spicecraft Smokey Garlic Salt
- 600g potatoes, diced
Method:
- In a large saucepan, heat the oil and add onion and bacon. Cook 5-6 minutes until onion is starting to turn translucent.
- Add the potatoes and stock to the pot and bring to a simmer. Cook for 25 minutes until potatoes are falling apart.
- Remove a few large spoonfuls of the chunky potato bits and set aside, then allow the soup to cool slightly.
- Transfer the soup to a blender and blitz a few times. Drizzle in the cream and blend until you reach the desired consistency.
- Stir the set-aside potatoes back through the soup and serve with a crack of pepper and a sprinkle of smokey garlic salt.
This is now our favourite Chowder. So easy to make and oh so tasty. Have made it several times since stumbling across the recipe.
