Pimped Pepper and Miso Udon Carbonara

Looking to give your carbonara a bold, umami-rich twist? Our Pimped Pepper and Miso Udon Carbonara blends into a creamy, cheesy goodness. This Japanese-inspired take on a classic dish will become your new favorite fusion recipe!

 

Ingredients:

  • 600g Japanese-style udon noodles (3 x 200g packets)
  • 3-4 rashers of bacon, chopped
  • 1 teaspoon oil
  • 3 large eggs
  • ½ cup cream
  • 1 tablespoon Pimped Pepper
  • 1 tablespoon yellow miso
  • ½ cup grated parmesan cheese
  • Spring onions, thinly sliced (for garnish)

Method:

  1. In a small bowl, whisk together the eggs, cream, Pimped Pepper, miso, and a pinch of salt until well combined.
  2. Heat a large frypan over medium-high heat, add oil and chopped bacon, and cook for 5-6 minutes until crispy.
  3. Meanwhile, place the udon noodles in a large bowl, cover with boiling water, and leave to sit for 10 minutes. Drain the noodles.
  4. Add the drained noodles to the bacon pan and toss to coat them in the bacon fat.
  5. Reduce heat to low, add the egg mixture, and stir through the parmesan. Cook for 1-2 minutes until the noodles are saucy and well-coated.
  6. Serve with extra parmesan and a sprinkle of spring onions for garnish.
