Moroccan Carrot Salad

Sweet roasted carrots coated in our Rockin' Moroccan Rub, crunchy almonds, creamy feta, fresh mint, and a squeeze of lemon. Perfect warm on a winters night or chilled as a refreshing summer salad.

  • 1 Kg carrots cut into rounds about 2 cm thick
  • 2 Tbsp Spicecraft Rockin' Moroccan Rub
  • 3 Tbsp olive oil
  • 50 g almonds
  • 2 tsp Spicecraft Pimped Pepper
  • 100 g feta
  • Small handful fresh mint leaves, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat oven at 200°C
  2. In a bowl add the Rockin' Moroccan Rub and 2 Tbsp of the olive oil to the carrots, mix well until the carrots are well coated in the Rockin' Moroccan Rub.
  3. Place carrots in a roasting dish and roast in the oven, shaking them once or twice during cooking until they get a little bit of colour on them, about 20-30 minutes. In the last 5 minutes of cooking add the almonds to the carrots so they too get a little bit of colour on them.
  4. Once the carrots and almonds have some colour remove them from the oven. Now add the Pimped Pepper and 1 more Tbsp of olive oil, mix.
  5. You can enjoy the carrots and almonds just as they are, straight from the oven. Or, to make a salad: let them cool slightly, then crumble the feta over the top, add the chopped mint, and squeeze over the lemon juice. Drizzle with a little extra olive oil if needed. Serve warm or chilled – both ways are delicious!
