Kiwi Falafel with Super Dukkah
These Kiwi falafel pitas are crisp, fresh, and packed with flavour. Spiced with Crackin’ Kiwi Rub, coated in Super Dukkah and panko, and fried until golden, these chickpea bites are stuffed into warm pita with crunchy lettuce, cucumber, and a generous dollop of hummus. It’s a satisfying plant-based meal that doesn’t skip on texture or taste.

Ingredients
- 4 Pita breads, Large
- 2 handfuls Lettuce, Shredded
- ½ Telegraph cucumber, sliced thinly
- ½ cup Hummus
- 1 tin chickpeas
- 1 cup fresh parsley, chopped
- 1 egg
- 3 Tbsp flour
- ½ onion
- 2 cloves garlic
- 1 Tbsp Crackin' Kiwi Seasoning
- 1 cup Panko breadcrumbs
- 2 Tbsp Super Dukkah
Instructions
- In the bowl of a food processor, combine the chickpeas, parsley, egg, onion, garlic, flour, Crackin' Kiwi and pulse until combined and well processed.
- With wet hands roll out 12 balls of the chickpea dough and place on a plate.
- In a shallow dish combine the panko breadcrumbs with the Super Dukkah
- Place each falafel into the panko, pressing well to coat each piece.
- Heat aprrox 3 cm of oil in a large frypan over a medium-high heat. When hot, add felafel and cook 1-2 minutes, then flipping.
- Once the falafel are golden brown and crispy, remove to a plate.
- To assemble: Split pitas and fill with lettuce and cucumber, a few falafel bites and a dollop of hummus. Sprinkle everything with a good shake of Super Dukkah
Notes
No food processor? Mash the chickpeas and finely chop the rest—it still works.
