Here's our take on a classic Jambalaya - the Cajun rice staple packed with smoked sausage, chicken, veggies, prawns, and rice in a rich, spicy tomato broth.
The essential Cajun flavour comes from our Cravin' Cajun Rub and by adding our Pimped Pepper this adds to the complexity of the dish! Enjoy!

Ingredients
- 3 chorizo sausages, sliced
- 3 Tbsp olive oil
- 1 Chicken breast, sliced into thin strips
- 1 brown onion
- 1 yellow capsicum (bell pepper) diced
- 1 red capsicum (bell pepper) diced
- 2 stalks celery, diced
- 4 cloves garlic, finely diced
- 8 springs thyme, finely sliced
- 2 Tbsp Spicecraft's Cravin' Cajun Rub - add more if you like it hot!
- 1 tin of diced tomatoes
- 3 cups chicken stock
- 1 ½ cups uncooked long grain rice
- 24 prawns, defrosted
- 2 spring onions, finely sliced
- Spicecraft's Pimped Pepper - to taste
Instructions
- Place a large pan with a lid over medium-high heat. Add the olive oil, and once hot, add the sliced sausage. Sauté for 3-4 minutes.
- Add the sliced chicken breast, stirring often, for another 4-5 minutes. Then, add the diced onion and cook for 2 more minutes.
- Now add the capsicums, celery, and garlic. Season with some Pimped Pepper and cook for another 3-4 minutes. Add the chopped thyme, tomatoes, Cravin' Cajun Rub (the more you add the hotter it will be, so for a family friendly dish - just add 2 Tbsps, add more if you love HEAT!). Stir well.
- Pour in the chicken stock and bring everything to a light simmer, stirring well. Once simmering, add the rice evenly across the surface of the pan and gently stir in to ensure it’s distributed evenly. Cover the pan with a lid and reduce the heat to low.
- Cook for 20 minutes. Then, lift the lid and add the prawns to the top. Continue cooking on low for another 7 minutes until the prawns are fully cooked.
- Check if the rice is fully cooked, if not put the lid back on for a further 5 minutes. Once done, carefully stir the prawns through the rice.
- Sprinkle over the sliced spring onions, a sprinkle of Pimped Pepper, and if you like - more Cravin' Cajun, serve, and enjoy!
