Dukkah-Crusted Lamb and Rockin’ Moroccan Halloumi Pitas 🥙

Ingredients
- 350 g lamb steaks or strips
- 150 g halloumi
- 3 tsp oil, divided
- 1 tsp Spicecraft Rockin’ Moroccan Rub
- 2 Tablespoons Super Dukkah
- 2 cups baby spinach
- Choice of salad vegetables
- ½ cup mayonnaise
- 4 pita breads
Instructions
- Preheat oven to 180 C. Slice lamb into strips if not already. Slice halloumi into 1cm slices and place on a lined baking tray.
- Mix 1 tsp oil with 1 tsp Rockin’ Moroccan and a squeeze of lemon juice and mix well.
- Brush over the halloumi slices and place in the oven from approx 10 minutes until the outside begins to brown.
- In a medium bowl mix together 1 tsp oil and Super Dukkah. Add the lamb pieces and mix to coat.
- Heat remaining 1 tsp oil in a large frypan and heat over a medium-high heat. Add the lamb pieces and cook, turning regularly to brown all sides. Remove the lamb pieces from the pan and deglaze with a splash of water. Scrape all the tasty bits around the pan into the water to make a nice spicy sauce to drizzle over the lamb.
- Microwave the pita breads to warm through. Arrange salad vegetables on a large platter and sprinkle with extra Super Dukkah. Top with lamb and halloumi, remaining dukkah drizzle and your favourite mayo.
- Serve warm pitas split and stuffed with lamb, halloumi and salad.
