Crackin’ Kiwi Chicken and Veg sausage Rolls 😋

  • 1 ½ cups chopped baby spinach
  • 2 carrots, grated
  • 500 g chicken mince
  • ½ cups fresh breadcrumbs (about 2 slices of regular bread, grated with a box grater or food processor)
  • 1 egg
  • 2 Tablespoons Crackin Kiwi Rub
  • 400 g puff pastry
  • 2 Tablespoons milk
  • 2 Tablespoons No Bagel, No Bagel (optional, but recommended!)

Instructions

  1. In a large mixing bowl, combine the chopped spinach, grated carrot, chicken mince, breadcrumbs, egg and Crackin’ Kiwi Rub with a wooden spoon. Season with a sprinkle of salt.
  1. Roll out the puff pastry with a rolling pin until about 0.5cm thick and roughly a rectangle. Spoon the mixture along the centre evenly all the way to the ends. Starting at once of the long edges, roll the sides into a long sausage shape. Try and keep it tight so the filling doesn't fall out.
  2. Score the pastry evenly then cut the rolls and carefully arrange on a lined baking tray.
  3. Brush each roll with the milk and sprinkle with the No Bagel.
  4. Bake 25-35 minutes until the tops are crispy brown and they are cooked through (use a meat thermometer to at least 78 degrees celsius or slice one in half to check doneness!)
  5. Cool slightly on a rack then serve warm with tomato sauce!
