Ingredients
Beef
- 450 g beef rump, thinly sliced
- 1 tsp freshly minced garlic
- 2 Tbsp Crackin' Kiwi Seasoning
- 1 Tbsp mirin
- 1 Tbsp soy sauce
- 1 Tbsp cornflour
- 1 tsp white sugar
- 1 Tbsp water
- ½ tsp Pimped Pepper
- ¼ tsp baking soda
- 1 ¼ Tbsp cooking oil
Stir Fry
- 400 g dried flat noodles
- 2 Tbsp cooking oil
- 1 small brown onion, finely sliced
- 6 spring onions, cut into 3cm batons
- 3 Tbsp soy sauce
- 2 Tbsp oyster sauce
- 1 Tbsp Crackin' Kiwi Rub
- 250 g bean sprouts
- 1 Tbsp sesame oil
To serve
- No Bagel, No Bagel - sprinkle on top.
Instructions
Beef marinade
- Place the beef in a medium bowl with all of the marinade ingredients, mix and set aside for 10 minutes.
Stir-fry
- Bring a medium pot of water to the boil. Add the dried flat rice noodles and cook them for 2–3 minutes or until they are just pliable (note this is generally for 3–4 minutes less than the packet instructions advise – they will finish cooking in the sauce). Rinse under cold running water and drain, set aside.
- Heat a large, heavy-based pan over high heat. Once hot, add the oil and the beef and any residual marinade in the bowl. Cook in batches for 2–3 minutes until just cooked. Set aside on a plate.
- Deglaze the pan by adding 1/4 cup of water to the pan. Once the pan is deglazed, add the onion and spring onions to the same pan and cook, stirring, for 1–2 minutes until fragrant.
- Toss the noodles into the pan along with the soy sauce, oyster sauce, and Crackin' Kiwi Rub. Combine everything together.
- Add the beef (and any juices from the plate) along with the bean sprouts. Cook for a further 1 minute or until the beef is warmed through.
- Turn the heat off, drizzle with sesame oil and a good shake of No Bagel, No Bagel. serve immediately.
