Crispy pork belly is seared until golden, then tossed in a rich glaze of brown sugar, soy sauce, Pimped Pepper, and extra Jammin’ Jerk Rub for that bold, fiery finish.   1. Slice the pork belly into strips then into bite sized pieces using a very sharp knife
  2. Place into a bowl, drizzle with oil and sprinkle over the Jammin Jerk Rub, mixing to coat.
  3. Heat a heavy saucepan over a medium-high heat and add a good drizzle of oil to the pan. Once it has heated and is shimmering, add the pork. Stir occasionally, leaving the pork to sear and go golden brown on all sides. Remove to a plate and set aside.
  4. In the same pan, add the brown sugar, Jammin' Jerk Rub, Pimped Pepper and soy sauce. Stir and bring to a boil, cooking until it becomes sticky and saucy. Stir in the pork bites and heat through for 1-2 minutes before serving with slices of spring onions and extra chilies. 

Notes

For extra crispy edges, don’t overcrowd the pan—work in batches if needed.
