Crackin' Kiwi Chicken
This chicken and rice recipe is paired with a mild, tasty sauce. It's quick and easy to prepare, making it an ideal midweek meal that the whole family will enjoy. The spring onions and the No Bagel, No Bagel seasoning give it an added crunch. So good and so simple.

Ingredients
For the sauce
- 4 Tablespoons Soy sauce
- 2 Tablespoons Brown sugar
- 2 Tablespoons Sriracha
- 2 Limes, juiced
- 4 Cloves of Garlic, chopped
- 2 Tablespoons Fresh Ginger, minced
For the Chicken
- 500 g Chicken thigh fillets
- 2 Tablespoons Cornflour
- 3 Tablespoons Crackin' Kiwi Rub
To Serve
- No Bagel, No Bagel seasoning
- 2 Tablespoon Fresh Spring onions, sliced
Instructions
- Mix all the sauce ingredients together and set aside.
- Pat dry the chicken thighs with a paper towel, then coat thighs in cornflour and Crackin' Kiwi Rub.
- Heat 2 Tbsp of Olive oil in a pan on a medium-high heat, add chicken and cook for 3 mins until well browned, turn chicken and cook other side for another 3 mins. Lower the heat, add the sauce, cover pan and continue cooking until chicken is cooked through.
- Sprinkle with spring onions, No Bagel seasoning and serve with rice and some greens. 💚
