Air Fryer Prawn Crackers with Kia Ora Vietnam
Ridiculously crunchy. 🍤
A raw prawn goes onto softened rice paper, gets a good sprinkle of Kia Ora Vietnam, then heads into the air fryer until crisp, golden and seriously crunchy.
That’s pretty much it.
But the dipping sauce makes them even better.
Warm water, sugar, garlic, fish sauce, lime juice and another good shake of Kia Ora Vietnam. Fresh, salty, tangy and perfect with those crispy little crackers.
Serve them alongside sweet chilli sauce and watch how quickly the plate disappears.
Easy snack. Big crunch. Plenty of flavour.

Ingredients
Prawn Crackers
- Rice Paper sheets - as many as you want to eat!
- Raw prawns - we used frozen prawns and let them defost before using them.
- Kia ora Vietnam Rub
- coriander leaves (optional)
Vietnamese Easy Dipping Sauce
- ½ cup warm water
- 3 Tbsp sugar
- 3 Tbsp fish sauce
- juice of 1 lime
- 2 garlic cloves, finely chopped or minced
- Spicecraft's Kia ora Vietnam
- coriander leaves (optional)
Instructions
Prawn Crackers
- Prepare the rice paper: Take a round sheet of rice paper and using scissors, cut it in half to make two half circles.
- Soften the rice paper: Dip each half into warm water for a few seconds, until soft and pliable. Place flat on a clean work surface.
- Add the prawn: Place one raw prawn on one side of each half circle. Sprinkle the prawn with a little Kia Ora Vietnam Rub. You can add a corriander leaf on top of each prawn, if you like coriander.
- Fold and seal: Fold the other side of the rice paper over the prawn to form a small triangle. Gently press the edges together so they stick and seal.
- Into the air fryer: Lightly spray the air fryer basket with cooking oil. Place up to 4 prawn crackers in the basket, leaving a little space between each one so they don’t stick together.
- Spray and cook: Lightly spray the tops with cooking oil. Air fry at 180°C for 12–15 minutes, or until crisp and golden brown.
- Serve: Make as many crackers as you want, once made, transfer to a serving bowl, serve hot and crunchy with sweet chilli sauce or a Kia Ora Vietnam dipping sauce.
Vietnamese Easy Dipping Sauce
- Disolve the sugar in the warm water, add the rest of the ingredients, and stir to combine. Taste and adjust with a little extra lime, fish sauce and/or Kia Ora Vietnam if needed. Fresh, tangy, salty and perfect for dunking those crunchy prawn crackers.
Notes
Whip up an easy Vietnamese-style dipping sauce using warm water, sugar, fish sauce, lime juice, garlic, and a good shake of Kia Ora Vietnam. Taste and adjust to your liking.
