2 chicken breasts.
Parmesan Cheese 1/2 cup
Super Dukkah about 100gs
Parsley, finely chopped.
Cut beasts in half through centre so you now have 4 breasts, place chicken between baking paper, and bash with a mallet, until flat.
In a large bowl mix 100g Super Dukkah with 1/2 cup parmesan cheese.
In another large bowl beat the eggs together to make an egg wash.
Dip each piece of chicken first into the egg wash, then dip into the Super Dukkah mix, making sure to completely coat the breasts in the egg and the Dukkah mix.
Place chicken onto a lined baking tray, drizzle a little olive oil over the chicken and bake at 180C for around 20mins, or until cooked through.
Serve sprinkled with some chopped parsley.
**You can add some breadcrumbs to the Dukkah and cheese mix if you wish, this will help the Dukkah go further.
